La Semeuse High Roasted Coffees are a truly unique taste experience. For more than 100 years now the Bloch Family has been crafting and refining exceptional coffees using our unique artisanal roasting methods. The result in your cup is a distinctly full flavored, smooth, balanced coffee without bitter aftertaste!
The stage
The high altitude, clean crisp mountain air and micro climate of the location of our roasting shop in La-Chaux-de-Fonds Switzerland naturally create the ideal conditions for our Master roasters work.
Physics
High Altitude Roasting allows the beans to be roasted at a lower temperature for longer periods. This is due to the physics associated with, primarily, the lower temperature at which water boils at high altitudes. The moisture is drawn out of the beans, without burning or charring, releasing the complex natural flavors and aromas found in our exceptional bean selections. This process has been refined through three generations over the last century we have roasted in the mountain town of La-Chaux-de-Fonds.

Green Coffee:
Coffee first and foremost is the result of the work of thousands of growers and laborers around the world. This is always in our awareness as we seek out new partners and strengthen existing relationships with coffee suppliers around the world.
With this consciousness we select the only finest raw [green] coffee beans which we then test through taste, touch and sight in our cupping room in La Chaux-de-Fonds. Once selected the raw beans are then passed to our Master roasters.

Even with more than a 100 years of roasting experience we continue to learn and evolve our technique. We roast in small batches using the traditional artisan methods passed down through three generations of La Semeuse roasters. Along with the hands on traditional technique we have learned to make good use of modern science to test the quality and consistency of each batch. This helps us to better understand how to work in harmony with our natural environment.

This too is true for brewing. The best method for brewing is the one that yields a coffee you find pleasurable to drink.
Here are some tips, thoughts and general suggestions on brewing. Take them as you wish and experiment to fit them to your taste.
Choose a brewing method. If you already have a preferred brewing method we recommend starting with the usual coffee to water ratios you already use. Then to your taste add more coffee for stronger or less for a milder cup.
We suggest a coffee to water ratio of 2 table spoons for each cup. Using less will give you a milder cup and more a stronger cup.
For optimal extraction of flavor we recommend the following brewing methods.
French Press: Inexpensive, widely available and simple to use.
Stove top espresso makers: Inexpensive, available at specialty stores and online, simple to use.
Pod machine: A specialty machine designed for use with single serve E.S.E. pods [44m compostable]. These are a great way to brew individual espresso and Americano drinks at home. Costs vary based on make and options.
Filter: many options are available for filter brewing from single serve pour over to automatic drip machines. Most households already have one or you can find them at any appliance store.
